Organic Valley Sour Cream is a blend of pasteurized, homogenized organic cream and organic skim milk. The blend is "cultured" to achieve the signature tangy flavor, and active acidophilus and Bifidus probiotics are added. Vegetarian microbial enzymes (such as the enzymes used to create many Organic Valley kinds of cheese) are introduced to provide velvety texture. Organic Valley produces organic regular (full fat) sour cream and organic low-fat sour cream. Because Organic Valley Lowfat Sour Cream has a lighter cream body, we also incorporate rice starch and organic nonfat dry milk to stabilize and thicken the sour cream.
